We take a whole USDA Prime First Cut Beef Brisket and remove the flat section.  Our hand carved First Cuts are outstanding and sure to cook beautifully whether it’s an oven or a smoker.  A first cut brisket contains primarily the slightly leaner, meatier flat section but we make sure to leave plenty of fat on top for superior flavor.
